Pashmak is Persia's answer to cotton candy, only finer and richer. Instead of spun sugar alone, it is made by pulling cooked sugar with toasted flour and a little oil again and again until it forms thousands of hair-thin strands. The result looks like a cloud of silk and melts the moment it touches your tongue. Yazd is especially known for it, and it comes here in three flavours: golden saffron, pistachio and rose.
Children love it straight from the box, but pashmak is also a clever dessert topping. Pile a little on kulfi, falooda, kheer or ice cream, use it to crown a birthday cake, or place it beside tea on an Eid or wedding sweets tray for a touch of colour.
