Aloo bukhara are sun-dried plums with a deep, sweet-sour taste, and Iranian dried plums are a long-standing favourite in Pakistani kitchens. The fruit is dried whole with the stone in, which keeps the flesh thick and full of flavour as it turns a rich dark amber to brown. Soaked for a few minutes, the plums plump up and release a tangy juice that lifts rich gravies.
No Pakistani biryani feels complete without two or three aloo bukhara tucked into the rice, and they are just as good in korma, qeema and mutton pulao. Cooks also simmer them into khatti meethi chutney for samosas and chaat, or into a cooling sherbet in summer. In Iran, the same plums flavour slow-cooked stews such as khoresh-e aloo.
